Brewed up a test batch of a beer I've been asked to make for Autumn War this year. A friend of mine is stepping down after being baron for the last 3 years. I'm doing an imperial stout and shooting for 12% without too much sweetness. Looks like I might get 11% with this one if I'm lucky. Need to add more grain and use a strickter sparge. Problem is I'm running out of room in the mash tun I have. Hmmm, go bigger. Will try again next week. Used a couple of different grains and hops this... read more

Well, shit! I was worried about my F.G. Guess there was no need for that; good little ale yeast. I got an F.G. of 1.000 when I racked over to secondary tonight from both 5 gal corneys. That gives me a respectable 6.5. Going to do the other 10 gallon batch tomorrow. Hope it does as well.

Figured that doing 10 gallons wouldn't be much more effort than doing 5 gallons. Modified my favorite porter to allow for the extra volume. Went with 18 pounds of Briess 2 row. Got an OG of 1.050 hoping to finish with 5% alch. Planning on making another 10 gallon batch next week. Going to use 20 pounds of grain this time. 20 pounds is the most my mash/lauter tun can handle. Making my first batch of hard cider this weekend. Using 4 gallons of all natural apple cider and 5 pounds of fireweed honey. I am using whitelabs cider yeast. Should be ready for the summer season. I am going to keg it. Plan on it being deceptivly deadly. Hot out? Have some cider. Nah there isn't too much alch in it. Don't worry. I will probably horde all of it for myself. Real easy to make.

Well....finally done making the baltic porters. There is only so much one can stand. The 7.6% batch went into work for my promotion party. I was happy with the results. Most of the guys at work are fans of bud and MGD but all liked it and were suprised by the strength. I'm finishing it up this weekend. My second batch of the BP I got a better conversion rate with the grains but not where I felt it should be; the O.G. went up to a 1.078. My third and final batch was racked to the second... read more

I added 3 quarts or wort from the orriginal volume when fermentation in the primary slowed. The goal is to increase the alcohol content and lower the final gravity. My last high gravity batch had a finishing gravity that was above what I wanted. I now understand that yeast attenuation is important along with some other factors. Thought this might get past the F.G. of 1.040. Roll the dice. I have a video uploaded on youtube to check it out.

I finally have all of the supplies I need for all grain brewing. I planed on starting by March but with some homemade items I'm ahead of schedual. The first recipe I'm going to try is an English ESB using the infusion method. There is always room to grow. I have a good idea for a complete custom setup using 1/2 kegs, burners, plumbing; need to get a place with a garage first. No hurries.

Made an extract porter last night with a gravity of 1.100. Found a couple extra pounds of DME and threw it in for the hell of it. It's busily bubbling away. Should be my last extract brew for awhlie.

Bought a book on cordials. I made one with cherries, one with banana extract and one with anise extract. The banana is popular and almost finished. The "uzo" turned out like the real deal. The cherry has a couple more days before I take it off cherries. I'm suprised at how easy it is to put one together. Should have looked into it earlier.
