Awesome morning! Found a recipe to make cannoli shells that doesn't require cannoli tubes. Basically it is a crepe that is then deep fried. I ended up pinning them with a skewer to keep them from unrolling, but they look good. Lightly sweet, hint of chocolate....can't wait to fill them up with the cherry marscapone (which I made myself :)) and top them with chocolate and cherries.....mmmmm, I want to call it chocolate covered cherry cannolo.

Hey All,
I must be feeling quite well after a good day of rest and a couple days of Mucinex to clear up my sinuses. So I'm back to all my crazy stuff....today's adventure is a foray into Herliciculture. Yes, the snails that wander around here are edible :) So I went on a harvesting adventure, saw some strange stuff, snails with massive dingle-berries (yes, dried crap) that I didn't pick up cuz I thought they might be sick, and snails fucking (its actually comical!) that I left to make more...

More gushing about my creations. You saw that the paneer was super mild with a bit of a lemony kick and a texture perfect for cooking.
The queso blanco with garlic and oregano turned out pretty good. It is a bit dry so I'll not cook it as hot next time and be a bit more gentle with it. The flavor is excellent, although I'm very tempted to brine it as it does lack any trace of saltiness.....although given my plan to make olive mojo with it, it probably doesn't need any salt.

Hey All,
Well, I just did it, I made my first batch of cheese. It is a simple cheese, panir (or paneer for those of you in certain parts of India). It curdled beautifully with massive curds and is currently pressing away under a gallon jug of milk (about 4lbs of force). It will come out from under pressing in about 1hour and 45min. So I guess that means you are all welcomed to join me for Sag Paneer very soon....it is one of my favorite Indian dishes, I have a recipe for it, and now that I...

Hey All,
Just a quick one before I run off to sign the contract on the house.
The curried ricotta is now steeping...it should be awesome intense and go very well with beer! The ricotta itself is delicious, and the currying is only going to make it better.
