Just thought Id drop a line to wish all a merry christmas and happy new year and to inform you that I got a 4.0 last semester so actually Im on the presidents list. I fuckin rock. Oh yes and I turned 30 on wednesday YIKES. so far so good.

School

Its the final countdown. John and I are going shopping today for school supplies. Me, Im getting school supplies. That just sounds so weird to me. I cant believe Im going back to school. MONDAY.

I had a panic attack Wednesday thinking about it, It was the strangest thing, we were sitting there watching tv and a preview for Rescue Me came on for next Tuesdays episode and all the sudden tears were rolling down my face and I was thinking to myself, Ill have 2 classes under my belt by then, I couldnt breathe, and I asked John for a glass of water. He came back water in hand to say, dont worry baby, I got your back. No matter what happens, if you fail, at least you tried, but your not going too, youll be great. so no matter what happens, Ive got you. He took one look at me and knew why I was flippin. I hope for all of you that someones got your back, like he has mine. I couldnt have made it this far without him, and I couldnt be doing this without his support, I thank god every fuckin day for that wonderful man, I feel we are the luckiest people in the world.

This morning as he made his way across the bedroom he looks back at me at the foot of the loft stairs and said out of the blue, this has been the best four years of my life Amanda, you are an awesome chick, your hot, your funny, you take great care of me, did I mention your beautiful? Im a lucky guy! I couldnt agree more!

So Monday morning, sweaty palms and all, Ill be entering my first college class in 5 years! I hope they dont ask our age. I hope theres someone in there older than me. Im so freakin nervous. I had a nightmare last night, I was with my brother in my home town, and we were signing up for classes at the high school, I couldnt figure out where to sign my name or something, and then I started to think to myself, its because you dont belong here, you need to go to the university!

Show me the money!

I just completed my Student Aid Application on line. I would have done it sooner if I would have recieved my pin # my email as they promised, instead it took over a week, but this morn, when I got up I ran to my computer like a tot on Christmas morn and there it was, my very own electronic signature!

I could finally complete my application, my plea for some chedda, some greenbacks, flow, you know some benjamins. Looking across my tax returns for last year I made a chuckle, I made 1400$$. Yes you read that right fourteen hundred smackers. What can I say, Im a high roller. I think that speaks for itself when begging to the govt for $$. Somehow I think I would be better off if I were to pop out a few bastards that I couldnt afford, I bet theyd pay for my whole damn education then. Fuckin breeders get all the breaks. How about the govt give me a food card in apprecation for NOT having children.
Like here Miss Breasbois, the United States of America would like to thank you for not reproducing, for not populating the earth with yet more children that other people have to pay for, heres a check. Again Thank you. We appreciate your use of birth control.

The other day I was going through the grocery line, and not a single solitary person ahead of me paid with cash they made, NOPE, they all had their Bridge Cards. Which for those of you who arent familair is like a credit card that the govt puts money on for you to buy food. Now why we ever stopped giving them fake money to pay for food with is beyond me. Oh wait I think its because if you have some sort of job, you can acutally use the card as an atm card and withdrawl your food allowance money and spend it on, oh I dont know 40's, crack, pornos. Then I watched the bitch in front on me walk out to her new Malibu, granted it wasnt a Caddy, (which the majority are) but WTF, if you cant afford food for you and your family, how can you afford a car payment, gas, insurance, maintenence???? YOur ass should be riding the fuckin bus. The car was probably in her mama's name....but thats all right cause shes still fly, got gator boots and a 3 peice Gucci suit, cause shes hood rich ahhh ahhhh.. Fuck Bridge cards.

The Best Steak Sammy youll ever have

Steak:
1/4 cup Worchestershire sauce
1/4 cup EVOO
1 TB hot sauce
6 cloves of garlic
1 flank or bonless sirloin steak
Freshly ground pepper
Kosher Salt
6 hero sandwich rolls
Watercress or Arugula

Onions:
2 TB evoo
3 medium red onions sliced 1/3 inch thick
3 cloves of garlic smashed
salt
1tsp fresh thyme leaves chopped
1/2 tsp hot sauce
1/2 cup low sodium canned chicken broth

Blue Cheese Sauce
4 oz crumbled blue cheese
1 cup mayo
1 lemon zest finely grated
Fresh ground pepper

Mix the Worchestershire, evoo, hot sauce, and 5 cloves of garlic in a large glass baking dish. Add the steak and swish around, turning until evenly coated. Marinate at room temp for 15 -30 min, or cover and refriderate for up to 4 hours, flipping the steak once or twice.

Meanwhile, heat a alrge skillet over med high heat add the evoo and dwhen shimmering add the onions. Cook stirring occasionally untill the onions are brown, about 8 min, then stir in garlicm salt thyme and hot sauce, cook until the onions are tender, about 4 more minutes. Add the chicken broth and scrape up any brown bits from the bottom of the pan. Cook until all the broth is gone and then season with pepper. Set aside

Preheat your grill or grill pan , or Foreman med-high heat.

Remove the steak from the marinade and season one side with salt and pepper (unless its goin on the Foreman). Place seasoned side of the meat down on the grill. Cook steak undisturbed for 5 minutes. Then rotate the meat about 90 degrees (dont turn it over) on the grill to make clear cross marks and grill another 2 min. Season the other side of the steak and flip. Continue to grill to med. med rare....your preference. Transfer to cutting board to rest for 15 minutes.

Meanwhile mash the blue cheese in a bowl with the mayo, zest, and pepper to taste.

Cut rolls in half horizontally and brush the insides with evoo. Grill until warm. Rub toasted bread with the remaining clove of garlic.

Thinly slice the meat across the grain and assmeble sandwiches.

Roasted tomatoes and Portabella shrooms
2 large caps
8 ripe toms halves length wise
2 tb evoo
4 to 5 thyme sprigs
4 cloves of garlic
salt and pepper

Toss trasfer to baking sheet, cut side up and roast 20 min
Throw these atop your mound of meat, this sandwich KICKS ASS

Ahhhh , I need some help...

Im having a small dinner party and cant figure out what to serve as sides...maybe just a salad???

So far Im making Chicken Marsala, and Tomato, basil and fresh Mozz Bruschetta. So Im kinda stuck there......I was thinking of making roasted garlic smashed red potatoes to go with the Marsala.....but Im stuck there, any ideas would be greatly appreciated....

Your mom goes to college

Well folks, I did it, yet another step into the abyss I call adulthood. Ill be 30 this year, and so far, I havent done much career wise is a long time. I quit my bar job the other day........well....because I can. I have been toying around with going back to school, so today. I did it. I am officially a student, again. I thought I was going to throw up while my councelor was helping me decide on which classes to take first.
I looked around in the waiting rooms at the kids walking through the halls, and thought to myself how incredibly young they looked, and tried to remember what I looked like, and thought about at that age. I tried to remember how completely lost I felt. I wondered how many of them would be back here 6 years later like me. It was itimidating and invigorating all at the same time. The thought of another new start this late in the game.
I hope I can keep up, I hope Im not that annoying older lady who keeps the class over by asking ridiculous questions to be sure I really really get it this time, I hope theres some cute young boys to stare at in my classes.

BFD, Big Fuckin Deal.

So Im at the local superstore and yeah, I went to the 15 or fewer and I had over 15. It wasnt busy and I let the women behind me who had fewer go ahead of me. No biggy, she didnt even have to ask, I just suggested it.

Then as Im standin there this old broad rolls up on me, stands right next to me and starts huffin and puffin about the fact that I have more than the allotted items.

Im like hey lady, why dont you get over it, what are you the grocery line natzi? What are you afraid your going to die waiting in line behind me? I said dont blow a gasket lady. Shes like what cant you read, Im like no....Im illiterate. Shes still pissin and moanin, I tell her to back up outta my personal space....she walks off all sorts of pissed off. Then I call her a twat. The 2 people behind her are all giving me the yuck face, to which Im like ehhhhhhh, anyone else have somethin to say? No reply.

Heres the kicker, if she would have simply walked up behind me I would have noticed she only had 2 items and let her go ahead, as I did mere seconds before. I have no problem, hey Im breakin the rules, I was like 8 over, GET THE FUCK OVER IT. Christ, pick you battles, is it really worth the spike in your blood pressure lady? I mean if thats the worse thing thats happened today, Id call that a pretty good day.

I've done it before, infact the clerks have even invited me into the line, Im like, are you sure? I have like 21 items. I say to the guy, Im sorry, I would have let her go ahead if she would have simply asked insted of rollin up on me and being a total turd. Hes like, I dont care. I said am I gonna get written up he laughs and says, no....what are we gonna do? Ban you from the store? We laugh and tell each other to have a good evening and I stroll outta the store.

Everybodys in such a hurry these days, slow the fuck down, you could die in your sleep tonight, you might end up appreciating that extra 52 seconds it took for my 7 plus items to be scanned and bagged.

Get your Greek On

Here in the so so Township of Saginaw Mi, we kick off the first day of Greek fest.

What is greekfest you ask. Well basically....in a nutshell. The Greek Orthadox Church, of which I am not a parishoner....puts up a bunch of tents, stocked with luke warm keg beer, to which you wait in line for an eternity for a taste, food.......ummmm GYRO, and crazy whack greek music, then we all sit around on shifty tables in the hot balmy Michigan evening sippin our keg beer in attempt to cover up the Gyro breath.

Great fun is had by all.

Oh my Gorsh

Well, not sure if I was missed.......but I suppose I really dont care if you didnt. I have been so busy with the new place......We decided not to buy this one, well rent for another year, while we find the one we want. But we are so happy to be out of the hood, and into such a lovely little home. We have a huge back yard for the mut to frollic, The Kong ka ka ka Kong, is his favorite outside toy, we have a blast playing outside. I have been really busy in the yard, the landlord, didnt seem to take care of much out there, which is a shame because, someone at one time did take the time to plant roses, and nice shrubs, lillies and iris's. So for the last few days Ive been, up to my elbows in mulch, weeds and all that jive, and if I do say to myself....Im really good at it. Its lookin spectacular out there.

Things are lookin up business wise, were purchasing a 34ft Sea Ray for the Bay.......Lake Huron Bay that is. Should be on that bitch by next weekend CAN NOT WAIT! I love the water and the boat is huge! Sleeps 8 a/c kitchen, shower, fun fun fun! Well Im struggling again with how to load new pics of the house and my garden but Im trying so hopefully Ill add some to my profile.
