I recreated the tilapia recipe from John & Glenna's rehearsal dinner in St. Louis. I changed up the spices just a bit (because I never make the exact same dish twice), and I liked the results.
I started with the vegetables, since they'd take the longest. I cut up a head of cauliflower, 3 large carrots, a green pepper, and half of a sweet onion. Last night Charlie came over to hang out, and we discovered two very important things. First, the DVD player went kaput. I don't know what happened, but I do know it's been working within the past few weeks. We've got a power strip that we turn off when we're not home, so in theory it wasn't a lightning strike. The TV, router, and modem are on that same strip, and none of them are having issues. Alas, the nonfunctional DVD player meant we could not watch Tokyo Gore Police as planned.

Tonight I revisited an old friend, the beef & black bean burrito. However, I recreated the recipe with my new penchant for lightening the fat content of my meals.
First off the black beans were cooked without the benefit of chicken broth. I went a little heavier on the granulated garlic and cumin, and the result was very tasty.
