Hey! Coconut Milk Kefir works!!!

I found kefir starter at Rainbow a few weeks ago and finally found time when the baby was in bed to mix it up with a quart of coconut milk. Overnight it turned creamy and tangy. It's super rich and makes a great topping for muffins or fruit. The baby loves it, which is good since it's got good fats (she's a skinny girl) and lots of nice enzymes and lauric acid.
