The little guys are doing an awesome job, and this is perfect consistency for kefir! It is a little thick, fairly smooth, and tangy! The taste grows on you, and it has all kinds of health benefits - it adds good bacteria to your gut, and can kill bad bacteria - some studies (and plenty of personal stories) suggest that it can even kill the bacteria that causes ulcers.

My new kefir grains! I had made a few batches using Yogourmet starter packets, which turned out really well. But in my investigation of methods, I found out that the packets provide only a subset of the probiotic organisms that have been present in kefir for over 2000 years. Commercial producers switched to the powdered starter preparation years ago, since living cultures can be harder to control, and laws required certain food handling methods. This is a link to a local Hmong band that was mentioned in our paper today - their name is Post-Nomadic Syndrome, which I think is brilliant, their people have been wandering for so long. I like this song, too. It is really great to see the progress that the Hmong have made in the US over the years - there is a large population in Minnesota, and Wisconsin, and California. I have sat at this keyboard for a number of years now, it has just chugged along, so I never paid that much attention to it. Tonight, however, I had to reboot, and happened to look down at just the right angle, with the light in just the right place, and I absentmindedly read the sticker.
