Today's Meatcake Repice:

Today for Zoe's birthday, I made spicy garlic-bacon meatcakes that hate purple as much as she does. They seemed to go over well, so I thought I would share the recipe. Basically, they are small individual meatloaves with mashed potatoes on top as frosting, and topped with hunks of bacon. This recipe makes 12-13 meatcakes, with the 13th one to practice frosting on.

Meatloaf
3 lbs ground meat (2 lbs beef, 1 lb pork in this case)
1.5 cups cooked oatmeal (2 cups raw oats)
1.5 cups chopped onion
1/2 cup chopped fresh parsley
1/3 cup tamari or soy sauce
3 eggs
1 heaping Tbsp minced garlic
1 tsp thyme
lots of fresh ground pepper

Mix all the ingredients together using your hands. Form tennis ball-sized meatcakes and arrange somewhat spread out in glass baking dishes. Pour glaze over the little meatloaves: 3/4 cup ketchup mixed with Tapatio (60:40). Bake for 1 hour at 350.

Mashed Potatoes
4-5 russet potatoes, peeled & cut in quarters
3 oz. cream cheese
1/2 cup sour cream
2 tsp onion salt
2 tsp minced garlic
1/2 tsp salt
lots of fresh ground pepper
1 Tbsp butter

Boil the potatoes until soft. Mash together in a mixer or by hand. Add all the remaining ingredients and continue blending with the potatoes until smooth.

After the meatloaves are done baking and have cooled a bit, frost with mashed potatoes. I used the awesome frosting dispenser that Zoe gave me for my birthday! But a knife could work too. Crumble crispy bacon on top, or spell out your own special message in hunks of bacon. Delicious and very filling!
