30- 45 minute meal

Make use of some left-over turkey....

Ingredients
Carrots, Celery, Onions, Garlic, Sausage, Left-over Turkey and some seasoning salt, oh and extra virgin olive oil.
Carrots & Celery, cut up like a couple handfuls
Onions, I used one whole onion, same w/ the garlic
Sausages cut up like a couple handfuls
Turkey add like couple handfuls
(I didn't use a measuring cup, it's all measured in the handfuls)

add some extra virgin olive oil, (just enough to spread though out the pan or pot)
Heat up the carrots and Celery on med heat...
While that's going on cut up the onions, and garlic.... put them in a small container
Cut up the Sausages
Once the carrots and celery's been cooking for a while add the onions and garlic....
let them sweat it out for a bit inside the pot... add some seasoning salt, not too much though-
after a few minutes add the sausages.... Then cook those for a few minutes.....
Then I used half-a cup "regular cup" not a "measuring cup" of macaroni and two cups of water. (you could add more macaroni for more people)
cook that for about ten minutes, until the macaroni's done.... b4 the macaroni's done like 3 min b4 their done add the turkey... and your set- I'd say this meal was like for 2 & 1/2 people. Add more ingredients for more people. Oh don't really need the turkey, just need the sausages and some bacon. Oh I'm not the best at describing the cooking, but you get an idea. ;-)

Wow! And yum! That's how my grandparents from Italy and Switzerland made their meals. My mother, who was very smart but didn't grow up in the "handful" of this and "pinch' of that old country way felt she had to walk around behind them when she was learning to cook for my dad and us kids and write it all down in terms of cups and spoons and such. That being said, \she was a great cook, too. Different strokes for different folks....
